The rise of American BBQ has been steadily increasing for the past few years. Unique for its low and slow style of cooking flavourful meat. Native Americans were the originators of the earlier BBQ methods in America, later these traditions were adopted by the settlements they dealt with when it came to commerce and diplomatic relations. 

The earliest recorded American BBQ dates back to the 1600s. The word BBQ is thought to come from the Spanish term "Barbacoa" which means "to slow cook meat over an open fire".

Later, the style of that early BBQ merged with European traditions of cooking, using enclosed metal pots or grill structure substitutes instead of the elevated wooden methods of the Native population. Although, wood maintained its place in American BBQ due to its ability to add substantial flavour to BBQ meat. 

Colonists and those they forced over from Africa adopted the practice from the native population widely and added rubs and sauces. Many of these rubs and marinade sauce combinations persist to this day. The migration history is reflected in the sauces, like the South Carolina penchant for adding Mustard in their marinades, which came from the German taste for the sauce. 

However, the type of wood chunks used also depends on the geographic area. For example, mesquite is commonly used in Texas, whereas peach and apple woods are popular in the Carolinas.
